As soon as you offer more than one kind of reservation, each becomes its own product. Lunch and dinner are the most common; a set menu, afternoon tea or a chef's table follow.
Why separate rather than one product with wide times
Because the turn time differs. A lunch guest sits at the table for less time than a dinner guest, and with a set menu you know the duration fairly precisely. Put them in one product and you have to pick a single turn time that is wrong for both.
The second argument is your guest: in the booking module they see the products as a choice. "Lunch" and "Dinner" are clearer than a time from which they have to work out what they get.
A set menu
For a menu with a fixed price or a fixed slot, the product is also where you record that. Think of a minimum party size, or a booking cut-off — a menu you have to prepare is not something you want coming in at 19:45.
